About Elephant Garlic

Elephant garlic, a hard neck garlic, has been grown for the pretty flower which develops if the scape is not removed.

Flavor

This variety, known for its mild flavor, is actually a part of the leek family and not a true garlic.   For some people this is the only garlic that agrees with their digestive system.

The bulb produces on average 3 to 4 cloves and has been reported to grow as large as 3 inches. Interestingly, elephant garlic grows mini bulb like structures attached by a root looking string to the main bulb.

Price is per bulb. A clove develops into a bulb.

The seeds produced from the flower are suitable for soups and other dishes if you choose to grow them.

I have found garlic I have grown does best when planted above a sandy sub-soil giving it a well-drained environment.

Storage

When stored properly, Elephant garlic keeps well into the winter months.

Garlic. harvested in July, begins shipping in August and continues while supplies last.

Please Note the Following:

Garlic scapes, the top part of the stalk, generally appears in May and when removed promote larger bulbs. The scapes make a delicious pesto, top off a salad or casserole, or an addition to scrambled eggs. Choosing to leave the scapes  may result in smaller bulbs. You might want to leave some scapes and remove some scapes to get the best of both worlds. Garlic ‘seeds’ can be planted but require 2 growing seasons to produce a bulb. Planting cloves will produce a larger bulb in a shorter time frame (1 growing season: fall to mid-summer).
